The Backensholzer Hof is located in the middle of the North Frisian countryside and is now run by the 4th generation. The organic farm stands for modern and ecological agriculture that respects animals and nature. This can be seen, among other things, in the innovative animal welfare barn, which was developed in collaboration with Kiel University of Applied Sciences. The farm has been producing cheese for more than 30 years - exclusively with the farm's own cow's milk. The milk is treated as little as necessary to make the cheese particularly aromatic. The many different types of cheese are of course the focus of the farm store, which also sells home-baked sourdough bread, pasture eggs and other regional delicacies. And what makes the Backensholzer Hof even more special is that the farm has been operating its own biogas plant since the early 2000s and now not only supplies the entire facility with energy, but also around 2,000 households in the surrounding area. The farm also has its own kindergarten - here, four full-time teachers look after a total of 18 children, who experience everyday life on the farm first-hand and learn about topics such as sustainability, circular economy and animal welfare through play.

Kohlosseum in Wesselburen
The traditional company Kohlosseum in north-western Dithmarschen has been producing sauerkraut in different variations and flavors with great love for the craft since 1998. In the cabbage workshop, visitors can learn how sauerkraut is preserved without pasteurization and why the products are so valuable for nutrition during a demonstration followed by a tasting. The largest contiguous cabbage-growing area in Europe also has a museum that gives visitors an understanding of cabbage cultivation and production over the course of time. The farmers' market sells all types of cabbage to take away as well as many other regional products - and one or two surprises made from cabbage.

Klostersee farm in Grömitz
Just 2.5 km from a beautiful natural sandy beach is the Klostersee farm, which has been biodynamically farmed since 1987. The produce from the farm is processed into high-quality products in the farm's own cheese dairy and bakery and sold in the farm store and café. In addition to a large selection at the bread and cake counter, the wide range also includes savory red smear cheeses and other dairy products, meat products, fruit, vegetables, natural cosmetics and the most delicious organic ice cream. If you're out and about early, you can enjoy a hearty breakfast in the farm café from 9 a.m. or sample the delicious cakes on the terrace in the afternoon sun.

Frisian sheep's cheese dairy in Tetenbüll
A few kilometers from St. Peter-Ording lies the Friesische Schafskäserei, which has been gradually converted from an organic cattle farm to a dairy sheep farm since 2003. Today, more than 10 different types of cheese are produced in the farm's own cheese dairy using milk from the 130-strong flock of sheep and sold in the farm store. Interested visitors can experience the Bioland farm up close during one of the regular farm tours, gain an insight into the farm cycle and cheese production, stroke the curious sheep and, of course, taste the delicious cheese afterwards.

Liensfelder Landhof in Liensfeld
The farm, built in 1912 in the natural paradise of Holstein Switzerland, has been run by the Wülfken family since the 1970s. The Liensfelder Landhof brand was created in 2014 with the first asparagus cultivation and harvest, followed by the cultivation of potatoes and pumpkins. The Liensfelder farm store has been open since 2015, selling (harvest) fresh seasonal produce every day. These include various potato varieties, such as Aromata, gourmet potatoes, the main varieties Linda and Belana and, as a new addition, sweet potatoes. There is also a wide selection in the asparagus season: White, green and purple asparagus as well as the almost historic Huchel Alpha variety are on offer. All year round, there are also preserves, meat specialties, liqueurs, eggs and honey from the region - not forgetting the exceptional asparagus and potato beer.

Kühl farm store in Kirchspiel Garding
The Kühl farm store was created in 1991 from an unused calf barn of a barn built in 1841. In addition to a great selection of products from other regional farms, visitors can find the most delicious strawberries, cherries, fruit spreads and free-range eggs depending on the season. A visit is also worthwhile in the fall, when around 50 different pumpkin varieties are added to the range. In late summer and fall, you can also visit the corn maze - a great experience for all ages.

Fredeburg Estate between Ratzeburg and Mölln
Since 1991, Domäne Fredeburg has stood for biodynamic farming; today, 50 people work on 160 hectares of land growing vegetables, cereals and potatoes. The farm also has a 35-strong dairy herd, 50 pigs, chickens, geese, a seed breeding farm, its own cheese dairy and, of course, the 500 m² farm store with kitchen and café. Only organic products are offered here. These include fresh, seasonal vegetables and salads from the market garden, cheese from the farm's own cheese dairy and other dairy products, meat and sausages. In the adjoining kitchen and café, visitors can try hearty dishes as well as various cakes and pastries - either to take away or, when the weather is nice, to enjoy on the terrace with a view of the greenery. If you would like to get to know the farm and the concept better, you can take part in guided tours on various topics (e.g. healthy eating, animal welfare or vegetable growing), lyrical walks, workshops or lectures.

Biss Cheese Farm in Dersau
In the middle of picturesque Holstein Switzerland lies Käsehof Biss, a traditional farm that has been run by the Biss family for over 100 years. The most delicious cheeses have been produced here since 1999 - from mild and creamy to aged and spicy, there is something for every cheese connoisseur. To ensure and control the quality of the milk, the cheese farm grows different types of grain, maize and grass to provide the cows with a balanced diet in winter too. The Holfladen not only sells cheese specialties from its own production, but also those from the "Schleswig-Holstein Cheese Route", such as sheep's cheese, goat's cheese, smoked cheese and blue cheese, as well as other regional products.
